Too much?

y'all...I'm about to get REAL honest here.
I hope Kyle doesnt read this...

I am SO freaking ready to be engaged.
you know that E-card that everyone posts as a joke on pinterest.

This is my life.
I am SO ready for Kyle to pop the question,
and I'm probably being really annoying about it.
But it doesn't help that every time I calm down about it and accept the fact that it might be a while,
someone younger than me gets engaged.
I think 5 of my facebook friends have gotten engaged in the past week.
okay, sorry...

So anyways, I just needed to vent to yall.
In hopes that you wont think I'm a psycho and some of you can share my pain.

I mean we've been together for almost 5 years now,
we're great together.

Want me to prove it?
Cuz I will.

Haha I'm sorry for the couple obsessed post today.
But hey I told yall I needed to vent!
That boy up there is my best friend and the love of my life.
and I'm going to learn to be patient until he's ready to marry me.
I mean, he's doing the smart thing and waiting till we both have real jobs.
Well atleast that's his excuse for now ;]

Okay, now that I got that off my chest I'm done being a psycho,
and regular posts will continue tomorrow.

Kyle and I both work at the same Golf course today,
which means we'll probably have a sneaky romantic 5 second make out session somewhere,
because we do what we want.


I eat too much fried food.

Everyone have a good weekend?
Mine was good! Kyle and I got to have a lazy day on Saturday,
we layed on the couch and watched the olympics and OMG can I just say....
I am SO PISSED I never played handball.
How did I not know about this sport?
I have literally played every single other sport there is out there,
but wow this one looks SO fun, I'm totally sad that I didnt become a professional handball player.
But oh well.

So after being lazy for a few hours we got hungry.
I told Kyle I would cook for him...
but we all know that wasnt likely to happen.
(I need to be a better housewife  trophy girlfriend)
So we went to Longhorns, this great little burger place that will make your tastebuds
the happiest they have ever been and your love handles grow within seconds.

We got "toothpicks" as an appetizer, which is fried onion rings & fried jalapenos.
I'm not a fan of jalapenos, but Lord almighty, I was ALL over these.

And then for the main course I went with a bacon cheeseburger with a side of fries

mmm makes my mouth water just looking at it.

So anyways, I FINALLY bought myself a new camera.
And I decided to stick with a Nikon, I REALLY wanted to get a Canon,
but I think I'm going to wait and get a Canon when I'm married and makin the big bucks.
So before my apartment caught on fire and everything got water damage,
I had a Nikon coolpix L120.
Soooo I just went for a little upgrade.
I ended up getting the Nikon coolpix P1500
And here she is!

I cantttttttt even wait to start using her!
I also cant wait to read about all of yalls weekends!
Hooray for Monday, because I have the day off.

It's okay Thursday & Camera suggestions

It's okay that I only got 2 hours of sleep last night and had to wake up at 5:30 for work this morning,
Because I had an AMAZING time with my friends at the Randy Rogers concert and it was totally worth it.

Love these girls.

It's okay that my new apartment is still a mess and none of my pictures are hung up,
because I'm already 100x more happier living here than I was in my old apartment.

It's okay that I haven't worked in 2 weeks,
because I desperately needed a break from work anyways, just wish my dryer didn't have to catch on fire!

It's okay that it's in the middle of the day and I am just now writing this post,
because sometimes real life comes first and blogging is hard to stay on top of.

It's okay that I have a severe addiction to cheese,
because that's totally normal right?

I hope all of you lovely people are having a great Thursday!
I'm about to take a nice long nap, and then hopefully going to go purchase a new camera today,
since mine got damaged!

Any suggestions on a camera?
I had a Nikon Cookpix L120, and I'm thinking about doing a small upgrade.
Should I stick with Nikon or switch to a Canon?
I wanna try to buy one at or below $500

Yummies I want to make in my new home.

FINALLY got internet!
Well I actually stole it from one of my neighbors, but hey it'll do.
Since my life consists of waiting around for insurance people the majority of the time
I figured I'd do a recipe post today.

Pasta Crunchies
(perfect for dipping in spinach artichoke dip)
1 lb bow tie pasta
the juice of 1 lemon
handful of parmesan cheese
kosher salt to taste
bring large pot of water to a boil and add bow ties and salt, cook half way, drain.
working in batches, transfer some bow ties into about 1/2 cup of hot vegetable oil.
When the edges get golden, flip. Remove once golden on both sides, (this process is very fast)
When they are golden remove from the pan and immediately toss with some salt, lemon and parmesan.
Repeat the process until they are all fried.

Parmesan Chicken Bundles

 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
 1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups Mozzarella Cheese, divided
6 Tbsp. Grated Parmesan Cheese, divided
 6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
 1 egg
 10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated


PREHEAT oven to 375ºF. 
Mix cream cheese, spinach, 1 cup of the mozzarella cheese and 3 Tbsp. of the Parmesan cheese until well blended; 
Spread evenly onto chicken breasts. 
Starting at one of the short ends of each breast, roll up chicken tightly. 
Secure with wooden toothpicks, if desired. Set aside. 
BEAT egg in shallow bowl or pie plate. 
Mix remaining 3 Tbsp. Parmesan cheese and the cracker crumbs in separate shallow bowl or pie plate. 
Dip chicken bundles in egg, then roll in crumb mixture. 
Place, seam-sides down, in 13×9-inch baking dish sprayed with cooking spray. 
BAKE 30 min. or until chicken is cooked through (165ºF). Remove and discard toothpicks, if using. 
Serve topped with the spaghetti sauce and remaining 1/4 cup mozzarella cheese.

Baked Chicken & Spinach Flautas


1 pound boneless, skinless chicken thighs (about 4)
16 ounces beer (or chicken broth)
2 cups water
1 teaspoon paprika
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon chili powder
1 jalapeño pepper, minced
3 cups baby spinach, chopped
5 burrito-size flour tortillas (9 inches)
6 ounces queso quesadilla or other melting cheese
1 tablespoon olive oil or cooking spray
salsa, for serving


  1. Preheat the oven to 450*F.
  2. Put the chicken thighs in a deep sided saute pan and cover with the beer and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove the chicken from the liquid and shred it. Mix together the chicken and seasonings.
  3. Pour out all but 1/4 cup of the cooking liquid. Add the jalapeno and spinach and cook over low heat until for 2-3 minutes, or until the spinach is wilted.
  4. Cut the tortillas in half. Spoon 1/10th of the chicken (about 1 tablespoon) along the long edge of a tortilla. Repeat with the spinach and cheese. Roll the tortilla up, starting with the straight edge. Place seam-side down on an oiled baking sheet. Repeat with remaining tortillas.
Brush the flautas with olive oil or spray with cooking spray. Bake for 10 minutes, then turn them over and bake for until 10 minutes, or until crispy. Serve with salsa.

Nutella peanut butter banana ice cream
3 cups whole milk
1 cup heavy cream
1/2 vanilla bean pod
5 egg yolks
1 cup sugar
2 teaspoons vanilla extract
2 tablespoons vodka
1 ripe banana, chopped into small chunks
1/4 cup peanut butter
1/4 cup nutella
put a large sauce pan on the stove
split the vanilla bean pod in half and scrape the beans out and place the pod and the beans in the pot
add whole milk and heavy cream
over medium heat, heat the mixture until little bubbles start to form around the edges of the pot, but it is not at a boil.
remove from heat
In a medium bowl, whisk the egg yolks until they start to lighten a bit(this takes a few minutes with vigorous whisking).
Gradually add the sugar while still whisking.
CAREFULLY start to add some of the hot milk into the egg mixture.
Do this by taking about 1/4 cup of the hot milk mixture at a time and slowly adding it to the egg mixture while whisking. Do it slowly or you will have scrambled eggs!
Continue to incorporate the milk into the eggs until about half of it is mixed in.
Pour the tempered egg mixture into the pot on the stove with the remaining milk.
Cook on low heat until the mixture is thickened and the temperature is 170(egg safety).
Pour it into a bowl and allow to sit a room temperature until it is no longer steaming.
Stir in vanilla and vodka
Cover tightly and place into the refrigerator overnight.
Remove from fridge and remove the split vanilla bean pod.
Pour into ice cream maker and follow manufactures directions.
A few minutes before the ice cream is done, add the Nutella and peanut butter by the spoonful.
Add the banana. Continue in the ice cream maker for another minute or so.

Okay let's be honest, thats WAAYY too much work.
I'm going to buy vanilla ice cream and stir in peanut butter, nutella, and banana chunks
and i'll let y'all know how that turns out!

A fresh start.

Well, i have been incredibly blessed and God has definitely been taking care of me.
Ive been able to stay at a hotel the whole week, and all of my belongings that got ruined are
being replaced, insurance is paying for most of it.

So after everything happened these people "flood masters" came to look
at the damage at my apartment, and they told me that they would go through everything,
look at it and figure out what stuff is salvageable and what stuff is going to need to be replaced.
A team of ladies came to my apartment on Saturday, whipped on some fold out tables 
and cleaning supplies and got to work.
My mom and I left to go try and find some new furniture for my new apartment and by the time we got back my entire apartment was clean and all packed into about 50 boxes. I was seriously in shock,
I had no idea they were going to pack everything for me also.
I have never felt such a HUGE weight lifted off my shoulders, it was amazing.
These people were SO awesome, it's a family business and the girls come in 
and clean and pack up everything and then the boys move everything.
Unfortunately the boys weren't going to be able to move my stuff until Tuesday so I
called up Kyle and his roommate and they helped me move all of the boxes into my new apartment.
Praise God for boys and their ability to move a large amount of boxes in a short period of time.

These are only a few, but as you can see it was a MESS.

And this is what I saw after the ladies from flood masters were done.

This is actually in my new apartment right after Kyle & Josh helped me move them.
But still, you get the point.

I think the thought of having to clean and pack all of the random junk all over my 
apartment was stressing me out more than anything, and it actually worked out perfect
because my mom and I ended up buying new furniture and doing express next day delivery.
Which means they can deliver any time from 7 AM to 10 PM with no courtesy call.
So we literally had to be in my apartment all day long until they were there
so all of the unpacking definitely kept us occupied.

It was actually a really good day, it was just me and my mom.
I had no TVs, no internet, and so we talked and laughed A LOT, like uncontrollably...
you know the laughs where no noise comes out but both of your faces are blood red and your falling
on the floor holding your crotch so you don't wet your pants?
Ya, those kinds of laughs. 

We pretty much unpacked everything then decided to order a pizza,
had a little picnic in the middle of the floor at my apt and talked about life.
then did some more unpacking/cleaning.
At around 6 mom decided she needed to go get a snack, so she left,
and the sweet Lord baby Jesus answered all of our prayers and the movers came!
I answered the door with the hugest smile on my face and the man literally thought I was in love with him.
Thank God my mom got back quick.
So after they moved everything in mom and I had to run all over the place buying everything
else I needed so I would pretty much be all set before she had to head back home.
We left at 6 and didn't get back until midnight and we were EXHAUSTED.
We still had a few things to get done in the morning and then she had to drive all day,
so we went straight to bed.
I've pretty much got everything all set up in my new apartment,
I need to get Kyle to hang up all of my pictures when he gets home from being out of town,
and I'm still waiting to find out if my TVs work or if they need to be replaced,
and my clothes and shoes should be back to me sometime next week unless they're ruined.

Wow thank you all SO much for the sweet words, and prayers.
It has definitely been a stressful few days but y'all definitely put me at ease,
Seriously every comment meant SO much to me and I am so grateful for all my blog friends!

I am excited to say that my mom is heading up here to help me move.
I can't wait to have my own place again, and not have my junk spread over 3 different places.
Our family vacation is in exact one month and I need to get my work out routine going!
gotta get it right and get it tighttttt ;]

I should be all moved into my new apartment by Sunday, fingers crossed.
And I can start living like a normal human being again,
well besides having extreme paranoia about drying my clothes.
But anywayyyys, insurance was able to hook me up with a hotel room for a few nights.
The first night was rough because it would not cool down in the room AT ALL.
The 2nd night was great because Kyle came over, 
and we had a little Popeyes picnic

and boy was it delicious.

I also decided to go and buy myself some new tennis shoes,
mine were getting old and they got soaked in my apartment so I figured
this would be the perfect time to splurge and buy myself some!
They are quite bright haha

Mom should be getting here later tonight,
The flood cleaning people are going to come tomorrow morning to pick up my clothes,
and most of my furniture that got ruined.
Then it's time to do some shopping for the new apartment!
I'm actually really excited, just hoping it doesn't take too long to get everything in my new apt.
I'll be sure to post some pictures once everything is all set up!

I started a fire.

I have a good excuse for not blogging yesterday.
no but really, I do.

MY apartment caught on fire.
yup, you heard me.

So heres the story:
I had the day off and had just gotten out of the shower and was watching tv.
I started to smell this burning/smokey smell in my apartment,
So I got up and looked around in my kitchen...nothing.
Went to my bathroom...nothing.
went to my room....nothing.
super weird, right?
The smell kept getting stronger so I looked over everything again,
 and the only thing on in my apartment was my dryer but I literally went up and smelled my dryer
and everything seemed okay.
So I text Kyle,
 "Somethings burning in or around my apartment, it smells like intense smoke/burning!"
I decided to throw on some clothes and go outside to make sure it wasn't coming from either
of my neighbors apartments and I still saw no sign of a fire.
I went back inside and my kitchen was a little smokey and the smell was still there,
I looked at my whole apartment again-no sign of a fire.
So I sit back down and continue pinteresting of course.
I got this awful feeling when the smell was just too close for comfort.
I got up and walked into my bathroom to see FLAMES all behind my dryer.
*panic mode*
these are the thoughts I had going through my mind for the .3 seconds after I saw the fire. 
"do I throw water on it? how do I use a fire extinguisher? am I going to die? all of my belongings are going to be gone forever. Don't throw water on it!"
So right after I see the fire I run outside where there was supposed to be a fire extinguisher,
but of course there wasn't one in the case.
So I run down stairs and see our maintenance lady and yell,
me: "wheres a fire extinguisher?!?!?!??!"
she responds frantically: "what's on fire?! what apartment?!"
me: "My dryer, 3203!!!"
Maintenance: "you go look in that hall for a fire extinguisher and ill go this way!"
Okay I know this sounds like a long conversation, but it literally probably lasted 2 seconds tops.
we both sprint in opposite directions,
 my heart is pounding out of my chest, i'm basically hyperventilating/on the verge of hysterically crying
I find a fire extinguisher and break the glass open and all of the fire alarms start going off,
I start to run incredibly awkwardly not sure how to hold the dang thing and see the
maintenance lady running with one also,
we get up to my apartment and she slams open the door, runs to my bathroom and starts spraying.
I don't remember what I was doing at this point, probably just in complete shock.
She sprays for about 3 seconds then yells,
So i run out, then run back in and grab my laptop that was sitting on my couch.
Literally didn't even think about it, my body just did it?
The maintenance lady bangs on everyones door and forces everyone to evacuate
and also calls 911.
I am in complete uncontrollable panic mode.
Everyone in the complex is outside and I am crying hysterically, holding my laptop,
hyperventilating, heart pounding a million times a minute, so the first thing I do is call my daddy.
I was crying and telling him everything that happened when all of the fire trucks started to arrive.
I got off the phone with my dad so I could call Kyle and he left work and came straight over.
I'm glad he left work so he could calm me down.
All I could think about was all of my belongings frying to a crisp, pictures, clothes, memories, everything was going to be gone.
After a while the firemen started shoveling pounds and pounds of water over my balcony.
I was in shock. There was SO much water y'all.
And they kept shoveling and shoveling, while water poured over my balcony.
Finally they said I could go up and look at my apartment.
Everything was soaking wet, but thankfully nothing was burnt except for my dryer/washer.
My apartment was full of water, everything was thrown around,
My massive dresser that was next to my dryer was soaking wet & had fire extinguisher powder 
all over it was thrown on top of my bed as well as a bunch of other random things,
My big couch and pillows and comforter were all thrown in the nasty hallway of my apartment.
all of my shoes were soaking wet and destroyed, my brand new camera was ruined, so many things...
I was absolutely devastated.
Until I finally came to the realization of how lucky I was.
If I wasn't home, every single thing I own would have been burnt to a crisp.
The fire could've been so much worse if I hadn't reacted so quickly,
I am so lucky that it was mostly water damage and barely any fire damage,
and that NO ONE was hurt, Thank God.

So that's why I've been absent lately,
been so busy and stressed out talking to insurance people 
and trying to get my living situation set up.
So if I don't post much this week that's why my friends.
Keep me in your prayers because I tend to stress a lot :/
But I am incredibly lucky to have such amazing friends and family
 that help keep me smiling every day and offer to help me with anything & everything.

Friday morning Kyle and I drove to Houston for one of our friends weddings!
I am so obsessed with the dress that I wore, I got it at Forever 21 for about $10, holla.
It was a nice little get away weekend and it was good to spend some time with his family.

I ate WAY too much food, and laughed until my cheeks were hurting.
Definitely not a bad thing.
Kyle and I stopped at Dairy Queen on the way there for some yummy ice cream!
I got an Oreo & Reeses blizzard. YUMMY.

I ended up finishing mine before Kyle, therefore he had to give me some of his.
So that's whats going on in the picture above Haha

Andddd we stopped at DQ on the way back home also.
This week will be full of work outs for me.

Today I don't have anything great to say or funny, awesome stories to tell.
